Diane's Dessert Recipes
Diane McGuigan's lenten dinner
Pumpkin Bars
You'll Need:
12 x 18x 1 1/4" pan
Stand Mixer
8 eggs - mix on "low" until thick
3 and 1/3 cups sugar - add and mix well
2 cups oil - add and mix well
29 oz can of cooked pumpkin - add and mix well
In a separate bowl, mix well on low:
4 cups of flour
1 tbsp & 1 tsp of baking powder
2 tsp baking soda
2 tsp salt
1 tbsp & 1 tsp ground cinnamon
Once mixed, add flour mixture to the pumpkin mixture
Spray a pan with cooking spray, and bake at 375 for 30 minute or until a toothpick or cake tester comes out clean in the center of the pan.
Cool completely. Then frost with cream cheese frosting.
Cream Cheese Frosting:
Mix 8 oz of room temperature cream cheese with 6 tbsp (3/4 stick) of soft butter
add 1 tsp of vanilla
slowly add 4 cups of powdered sugar and mix slowly

You'll Need:12 x 18x 1 1/4" pan
Stand Mixer (flat paddle if available)
Cream together:
3 cups of sugar
1 cup of room temperature butter
4 eggs - add 1 at a time and mix on slow
Add and mix:
2 cups of sour cream
1 tbsp & 1 tsp of vanilla
6 large ripe smashed bananas
In a separate bowl, blend:
4 cups of flour
2 tsp baking soda
2 tsp salt
Once mixed, add flour mixture SLOWLY to the banana mixture
Spray a pan with cooking spray, and bake at 25 minutes or until a toothpick or cake tester comes out clean in the center of the pan.
Cool completely. Then frost with cream cheese frosting.
